Italian Style Eggplant Rice Bowl

Ingredients:
onion (Julienne,sliced) 1
eggplant (sliced 2cm thin) 6 small (or 2-3 large)
tomato (diced) 3 medium
garlic 2-3 cloves diced
basil for flavor
oregeno for flavor
salt & pepper for flavor
parmegan topping
olive oil 2 tablespoons
brown rice (genmai)
How to make:
1. Heat up oil in sauté pan
2. Put in garlic, eggplant, onion. Cook until eggplant is soft, onions become transluscent.
3. Put in tomato, spices, salts. Turn down heat to simmer and cover.
4. Cook for about 10 minutes, add spices & salt to taste.
5. Serve on top of cooked brown rice. Add parmegan on top (liberally ☺)
6. Say “Itadakimasu” and enjoy!
